Although
an individual could be allergic to any food, such as fruits,
vegetables, and meats, there are eight foods that account for 90% of
all food-allergic reactions. These are:
milk, egg,
peanut,
tree nut (walnut, cashew, etc.),
fish,
shellfish, soy, and
wheat.
Anaphylaxis is a sudden,
severe, potentially fatal, systemic allergic reaction that can
involve various areas of the body (such as the skin, respiratory
tract, gastrointestinal tract, and cardiovascular system).
The Food Allergen Labeling and Consumer Protection Act of 2004
requires that all food manufacturers label ingredients in foods by
their common or usual name.
Approximately
2 percent of adults and about 5 percent of infants and young
children in the United States suffer from food allergies; and each
year, roughly 30,000 individuals require emergency room treatment
and 150 individuals die because of allergic reactions to food. At
present, there is no cure for food allergies; and a food allergic
consumer must avoid the food to which the consumer is allergic.
